Our oldest son plays on the York College soccer team along with many young men from Brazil, Portugal, Chile, and other countries that fascinate us. (Welcome to York, Nebraska. We are sorry it's so cold here.) It's been fun to become friends with and reach out to these students as Asa brings them over to our house for meals and such.
One young man, Diego, has made himself right at home with us. I CAN'T TELL YOU HOW HAPPY THIS MAKES ME. He lets me hug him, he joins us for family prayer time at the end of the day, he requests that I please make "that incredible apple dip if it isn't too much trouble."
If it isn't too much trouble. Oh my dear, Diego. It is absolutely no trouble and it is my
complete pleasure to make this dip for you.
Truly, the first time I served it to him, he took one bite, his eyes got big, and declared, "This is the BEST thing I've ever eaten!"
This, from someone who grew up in Chile, where I'm quite sure very delicious foods
grow.
So I make this Caramel Apple Dip often as an excuse to invite Diego over. Sometimes he skips the apples and eats the dip with his fork. #noshame I love him.

And with that, I am off to pick up Foster Son from a family visit. I praise God that He put this little boy in our home because as much as we strive to be a blessing to him, he has most certainly been a blessing to us.
