Prime Deals: Should I Get the Big Instant Pot?!? (Also coconut oil, cast iron, Blendtec...)

You know me. I've been super adamant to say "I don't want an Instant Pot; everyone leave me alone about the Instant Pot; I don't want to have to figure out a new appliance" blah, blah, blah.

Then I helped feed 140 people three meals a day for a week out at church camp and guess what was in the kitchen? A great big Instant Pot. Of course I was like, "well that's a silly thing to have in a big kitchen like this; how will that possibly make our lives easier while we feed this many kids?"

And then I used it.

It was lovely. Wonderful. I totally admit it. Dump in the food, turn it on, walk away, come back, the food is ready to serve. I think I might actually want one. Ugh!!

So many of you have told me that I will love it. Today for Prime Day I see that there is a great big 8-quart Instant Pot for a super low price and I'm just about ready to hit...the...button.

Talk me into it. Or out of it. Will this simplify my Simple Meals? Help a girl out! (And look at this one to tell me if it is as fabulous as it looks.)
