So now I'm trying to balance saving money (not buying too many convenience foods) with saving time (because our babies/kids take a lot of energy!).
The other day, I ended up doing way too much in the kitchen and overwhelmed myself. All I did is try to bake
banana
bread and make
stir fry at the same time. It felt silly - like I can't even make
this simple dish right now?? Really? Really. Standing to chop veggies with three toddlers at my feet and a newborn needing to be fed isn't a thing I can do right now, ha.
So I'm going back to all of these and they are basically perfect. Very little prep time to make, and I serve them all with frozen veggies I can quickly steam plus fruit that takes no prep at
all.
